CORN BASIL DRESSING

I wanted to replicate this corn dressing I had in LA and this did just that! And is very simple.

Ingredients

  • 2 ears of corn

  • 1 handful of basil with stems removed

  • 1 tbsp champagne vinegar

  • olive oil

  • salt

Step by Step

  1. Boil a pot of water large enough to fit your ears of corn.

  2. Place corn in boiling water and cook for 5 minutes.

  3. Take corn out, and let it sit until it is room temperature. Once at room temperature cut off all the kernels.

  4. Place all ingredients into a mason jar or equivalent and puree with an immersion blender until desired thickness. I’m sure this would work in a food processor as well.

  5. Serve over sadly, ontop of any protein, would probably be good with pasta too.
