sausage, broccoli & garlic pasta

This is a fan fave of sausage broccoli garlic pasta. 🍝🥦🍽 Easy weeknight recipe in about 20-30 mins!

Ingredients

  • 1 bunch of broccoli, broccoli rabe, or broccolini, chopped, tough stems removed

  • 1 lb of a fun pasta shape that has a whole or curves so the craggly bits can get caught up in it (i love pipe rigate)

  • 3 tbsp olive oil

  • 1 lb of pork sausage, casings removed (mild or spicy italian)

  • 4 cloves of garlic, minced

  • 1 shallot, chopped

  • 1/4 - ½ cup chicken stock or white wine

  • 1 tsp salt

  • 1/2 tsp of pepper

  • red pepper flakes (if desired)

  • 2 tbsp butter

  • 3/4 cup grated parm

  • juice and zest of 1 lemon

Step by Step

  1. Boil a pot of salted water. Once boiling, add the broccoli and cook for 2-3 minutes, making sure it stays bright green. Using a slotted spoon, move the broccoli to a colander to drain.

  2. Bring water back to a boil and add your pasta, cooking until a tiny bit above al dente and save some pasta water ❗

  3. Meanwhile, in a skillet or a Dutch oven, heat 2 tbsp of olive oil over medium-high heat. Add the sausage, breaking it up with a large wooden spoon and letting it get crispy for 5 minutes.

  4. Once the sausage has browned, add your garlic and shallot for 1 minute, stirring and making sure not to burn. Add 1/4 cup of your chicken stock and use the wooden spoon to get all the bits stuck to the bottom of the pan, these are gold. Add more stock if needed.

  5. Add in your drained broccoli and mix together with the sausage, adding the salt, pepper, and red pepper flakes.

  6. Once the pasta has cooked, add it to the pot with your slotted spoon, add the butter and about a 1/4 cup of pasta water, and cook for a minute, adding more pasta water if needed.

  7. Remove the pot from heat and add in the parm, lemon zest, and lemon juice and mix. Adjust seasonings if needed and add more olive oil if desired.
