Greek inspired turkey burgers

Ingredients

  • 1 lb 92% ground turkey (nothing higher than 94% so you still have some fat to help w the binding)

  • 1 tbsp mayo (secret ingredient)

  • 1 tbsp Calabrian chiles

  • 1 tbsp chopped fresh dill

  • 1/3 cup grated red onion

  • 1/3 cup feta (from a block in brine is always better!)

  • 1/2 tsp garlic powder

  • 1/2 tsp dried oregano

  • EVOO

  • salt&pepper

Step by Step

  1. Mix all ingredients together in a bowl.

  2. Preheat your cast iron skillet over medium with about a tablespoon of olive oil.

  3. Form turkey mixture into 4 burgers roughly the same size.

  4. Sear each burger for 4 minutes per side, making sure to not overcrowd the pan (I fit 3, then did 1).

  5. It’s best to use a meat thermometer to ensure your turkey reaches 165Β° internally and they won’t become dry.

  6. Let sit for a few minutes covered in tin foil, then enjoy! I topped with red onion, tomatoes, and a homemade tzatziki.
